I am sharing one of our favorite recipes over here on Madame Schischi today. It is super simple but oh so delicious and maybe just the right food these days since it is still chilly in the evenings and a bowl of fresh and hot chili con carne can round off your day in the best way.
Ingredients:
– minced meat
– red peppers
– chilies
– pieced tomatoes in sauce (caned)
– kidney beans (I use the chili flavored ones)
– onions
– spices (nutmeg, chili salt, pepper, caraway and everything else you like)
– grated cheddar cheese and spring onions as topping
I start with adding the spices and the butter in the pot and then add the minced meat and the onions. After that I put in all the other ingredients (chopped as small as possible) and let is cook for about 20 minutes and then let is simmer for about 40 minutes until I serve it.

In my opinion they are perfect for Valentine´s Day as well as rose colored raspberry macarons which are so light in texutre it is like you are eating a cloud.
The Recipe
I used the recipe from Lauren Gray´s blog as I wanted to try them so badly but haven´t found a simpler recipe anywhere else. It really is easy to make macarons so don´t shy away from it cause it looks super hard. I got the macarons baking mat from amazon and it really helped a lot in terms of sizing and shaping the macarons but I think in general it isn´t necessary. Just make sure you follow every step and not matter what happens sift the confectioners sugar otherwise it will get super lumpy and it won´t be the same. Also in terms of coloring you should use THE BEST food color I have found.
So for the recipe, I used ground almonds instead of the almond flour cause I didn´t want to buy a whole package for one recipe and I also had no raspberry extract so I left that away.
For the filling I mixed up butter, confectioners sugar and raspberry jam until it had a nice consistent. Pretty easy right. Just put the mixture into your piping bag and fill your macaron halfs with it. Don´t use up the whole space or it´s going to run over when you add the other macaron half.
Start baking
Make sure to give it a try and if they don´t turn out pretty the first time don´t throw them away cause they will still taste great.
since Valentine´s Day is right around the corner and I have planned more content than usual for one of my favorite holidays I am starting today with these adorable treats – RED VELVET CUPCAKES. I love red velvet cake. It is my favorite flavor ever and probably won´t change.
First I wanted to make a whole cake but after thinking on how to serve it little cupcakes came in a lot more handy for this purpose.
The deep red of the batter and the soft and delicious vanilla frosting topped with tiny pink sugar hearts make them the perfect little cake to gift to your collegues, family, friends or even enjoy all by yourself.
I have made red velvet cake several times but have never been a 100% satisfied and that was because of the color. If you have the wrong color when the batter is still raw it will turn out more pink than red and that is never what I was going for. It was back in August last summer when I found a food coloring paste fromWilton and it changed my baking forever.
It it super high pigmented and it also has the consistency of jello so it won´t dilute your dough at all but color very nicely. I know it says icing color on the packaging but that works just fine.If you are also bothered by food color a lot you should get it. They have over 10 colors and I think they might be as good as this one.
Not only do I love the holiday because of its meaning, I also don´t mind that the color combination of pink and red is going to be even more popular these days.
I am sharing another cookie recipe on the blog today. I usually don´t have any sweettooth but when it comes to cookies I am somehow out of control. The last cookie recipe I have shared was all over the internet and after I tried it I knew why. Be sure to check out the pumpkin chocolate chip cookie recipe here.
For today´s post I have tried these oatmeal cookies I have found on allrecipes. I wanted to try oatmeal cookies for a long time now because they are supposed to be and stay super soft and super chewy. And they where.
I made them exactly like the reicpe said but only baked them for 8 minutes. They came out super soft but they get harder by the time they cool so be aware of that.
One thing I would make different is the amount of sugar. It contains a lot of sugar and in my opinion it makes them a little too sweet. Not unbearable but for my taste a little too sweet.
Also the dark chocolate topping isn´t in the recipe but that is quick and easy made by melting it in your microwave (be sure to use couverture which is made for high temperatures otherwise your choclate will burn instead of melt).
Another awesome and super easy cookie recipe. Maybe you need a little sweet treat for the weekend and these cookies would be perfect.
