Food Friday – awesome summer noodle salad Italian style…

Hi guys,
we love Summer BBQ´s and since our patio is ready we are constantly outside playing with Chloe, drinking our coffee outside, dining or having a glass of wine and also heating up the grill. This means I am on the search for new recipes to add to grilled meat or fish almost everytime we plan a BBQ.
A noodle salad is never a bad idea. No matter for what or when you are making one. There are also thousands of options like for pasta dishes in general. I made this Italian inspired noodle salad my mum loves to prepare too so I am sharing the recipe here today.
Ingredients:
– 1 cup of black olives
– 1 cup of mini mozzarella
– noodles (cooked, mine are maccaroni)
– 1 cup of artichokes
– 1 cup of pesto red
– cook the maccaroni and let them cool down
– put everything together and stir until well combined
– eat
This delicious noodle salad takes about 30 minutes to make and is an awesome option for your own BBQ´s or for the ones you are invited too.

Food Friday – iced caramel chocolate coffee for hot Summer days….

Iced coffe of course. I mixed mine with cold chocolate milk, cream and a
caramel but you could also do without all these ingredients. This is probably
the most unmeasured and quickest recipe I have ever shared but too good not to.
feels like a whole meal so you don´t have to cook anything after. Not healthy
at all (just saying) but so good.

ice
milk (I used soy)
syrup
cream
straws
Now it is up to you. Create your own 5 minute drink to survive the heat.

Food Friday – healthy fingerfood – zucchini dippers…
Super easy. You only need 4 main ingredients and the spices you like.
Ingredients:
– 1 1/2 cups zucchini (grated)
– 1/2 cup shredded cheese (I used parmesan)
– 2 eggs
– 1 cup bread crumbs
– spices as you like
– grate zucchini with a kitchen grater on the smallest side
– be sure to get as much water out of the grated zucchini. Works best with a kitchen towel or paper towels
– press hard against to soak up as much as possible
– put all the ingredients together and mix
– make little tots out of the batter (I used a tablespoon for portioning to get the sizes equal)
– put on a baking sheet and bake at 170° degrees until golden and slightly crisp on the outside
– serve on plate with different dips (mine where garlic and chilli from the BBQ section of our local supermarket)
