Food Friday – soft and chewy chocolate chip cookies…

I am no lover of sweets in general but there are a few sweet treats I make an exception for and chocolate chip cookies are definitely one of them. But let´s make sure they are the right ones. I don´t like crunchy at all, so I am always going for soft and chewy cookies.

Another thing I love about cookies is the versatility. You can make them with seasonal ingredients, with the classics or plain. In the end it is always the same precidure and tastes perfectly good either way.

So here is what you need for a baking sheet full of delicious cookies which ake your house smell like you are living in a bakery.

Ingredients:
– 3/4 cup brown sugar
– 1/4 cup sugar
– 1 egg
– 2 teaspoons vanilla paste
– 1 1/2 cups flour
– 1 teaspoon baking powder
– 2 teaspoons cornstarch
– pinch of salt
– 1 cup chocolate chip cookies (optional as you like)

How-To:
– melt the butter in the microwave
– add the egg, sugar and vanilla paste and whisk together
– add flour, baking powder, cornstarch and salt and stir togethher
– add the chocolate chips
– portion on a plate (I use and ice cream scoop)
– put in the freezer for about 30 to 40 minutes
– preheat the oven to 175° 
– put cookie dough onto a baking tray cover with a baking sheet (about 9 per each)
– bake for 12 minutes – I only bake them for 9 minutes to make sure that they are slightly undercooked

I only let them bake for the 9 minutes cause I like them supersoft. Don´t be fooled by the consistency. They will get a lot more solid when they cool down.

Personally I love a cup of coffee with my cookie or nothing. Florian for example eats his with a glass of milk.

Food Friday – homemade apple cider for fall festivities…

as fall is my favorite season in terms of weather, clothing and food on weekends you can find me glued to my kitchen counter and trying out new recipes. I don´t care if it is a hearty dish, a sweet treat or even a drink.
So since there isn´t any hot apple cider available in Germany I made my own. 
So here is what you need:
– 12 apples – obviously (I mixed sweet and sour)
– 2 oranges
– cinnamon 
– cloves grounded 
– sugar 
– water
– whiskey or bourbon if you like
How-to:
– peel and cut the apples and put into a huge pot
– peel and cut your orange and add to the pot
– add the spices and the sugar to your fruit in the pot

– let it cook for a short time and then let it simmer at a medium temperature for about two hours
– be sure to have a look and stir from time to time
– puree everything in your pot and let it simmer for another 45 minutes
– serve hot with a stick of cinnamon (and additional a shot of whiskey or bourbon)


I am going to serve this as an aperitif for our Thanksgiving dinner. It is the perfect fall drink.

Food Friday – S´mores pie…

it is, isn´t it?! Fall is in full season, leaves are changing, fog is hanging heavy over the meadows in the mornings, the air is crips and fresh. Oh I could go on with this for many more lines.

But let´s have a look at this traditional treat. I know that summer is officially over – for both weather and season – so making s´mores over a firepit isn´t quite possibly anymore. So this recipe is for all my summer missing readers and chocolate fanatics. Just transform your s´mores into a pie and serve for coffee time or after a homemade cooked meal.

It isn´t hard at all and doesn´t take to long and believe me the taste brings back those summer bonfire nights vibes.

So let´s get bakin´..

Ingredients:

for the crust
– I used full grain Leibnitz biscuits – 2 cups
– 1/2 cup butter

Maybe a little less or a little more of both, keep mixing up until it is sticky and make a great base for the crust

for the filling
– 2 eggs
– heavy cream 1/2 cup
– milk (I used oatmilk) 1/2 cup
– 1/2 teaspoon vanilla extact
– little bit of salt
– chocolate crumbled (use a sharp knife) 1 1/2 half cups

for the topping
– marshmallows (mini and normal size)
 – (any sauce you like to drizzle it with for serving)
How to
– melt the butter and crumble the crust, stir together and push into your pie pan 
– bake the crust for 10 minutes at 160 degrees
– add the heavy cream, milk and chocolate in to a sauce pan and let is melt slowly at medium heat
– add the eggs and vanilla and stir together
– pour the filling into your pie pan and bake another 20 minutes
– the filling should not wobble anymore by taking it out of the oven
– add marshmallows on top and again put it into the oven for about
– change menu to grill function and watch your cake (when the heat of the grill funtion kicks in it takes about 15 to 20 SECONDS until your marshmallows are ready) otherwise your topping is going to be burnt or on fire
– serve warm in the pan
– drizzle with sauce if you like
The weather is getting warm on the weekends (only in the afternoons) so this would be a great last possibilty to relieve those summer vibes

Fall Dessert – delicious apple crumble…

I have such a sweet treat for you today you are going to love. Simple and delicious. That is what we love isn´t it?

Preparing a whole dinner is enough work, though so it is very nice to have a low maintenance dessert which can´t go wrong.
I decided to make an apple crumble as dessert for our Thanksgivinig dinner so I found lots of different recipes, tried some and mixed the best of everything togehter into one super apple crumble dish.
 In fact the hardest part is to peel and cut the apples. See how easy is this???

 What you need:

– 6 apples (I took some from our garden which where a little bit more on the sour side)
– 1/2 cup granulated sugar
– 1 teaspoon cinnamon
– 1 tablespoon flour

– peel the apples and cut into small pieces
– put the sugar, cinnamon and flour with the apples into a bowl and mix together
– then pour the mixture into a oven safe bowl

So let´s work on the crumble…

– 1 cup of oatmeals
– 1 cup of flour
– 1 cup brown sugar
– 1/4 teaspoon baking powder
 – 1/2 cup of melted butter


– mix all the ingredients together and spread on top of your apple mixture


– but the bowl into the preheated oven on about 180° degrees for 45 minutes


– serve warm and with a scoop of vanilla ice cream


This really is so so so delicious we ate it within two days.
