since I am cutting out most of the dairy products from my diet I am always on the search for other options and also for new products. I am a huge coffe lover addict so the most important part for me was to find a replacement for the milk in my coffee. 

I was drinking soy milk for a long time and then I switched to oat milk which I honestly enjoy much more. It tastes a little sweeter and I like it a lot better. Recently I was at the supermarket and looking for another type of milk – you can´t have to many options am I right – and I wanted to try the cashew milk but in fact I wasn´t ready to pay 7 Euro for one litre. This is insane expensive for just adding to your coffee. So I decided to try it myself.

I bought a pack of cashews and drove home.

The recipe is really simple. Step one is to put the needed amount of cashews into a bowl of water and let them soak for about 4 hours. I always take one cup so I have at least a little meassurement.
Afterwards you pour into a strainer to get rid of the water. Put your cashews into your blender, add water, I add two cups but this depends on how thick you like your creamer. 
For flavor you can add a teaspoon of vanilla paste, or a table spoon of maple syrup or even agave syrup to add some sweetness.
Blend everything together and fill it into a glass jar. Whether you are taking one with a screw cap or a swing top use a funnel to avoid the spilling and the mess afterwards. I buy the bottles at our local drug store but they are available almost everywhere.

You can store the cashew creamer in your fridge for about 5 days so I would recommend smaller bottles if you are not a daily coffee drinker.
This might be the easiest recipe I have ever posted.

Food Friday – carrot cake with white chocolate cream cheese frosting for Easter….

Hi guys and happy Friday,
the Easter weekend is finally here and I couldn´t be more excited. Having the whole family over tomorrow. Visiting the other part of the family on Sunday. Maybe we get some rest on Monday. 
Hope the weather is getting a little better (currently rain and 8°) to hide some eggs outside.
Since everyone in our family is loving my carott cake (the only exception are my parents) I made kind of an Easter tradition out of it. Not sure if I already wrote about it but it was the first cake I have made Florian when we started dating and he loved it ever since so this is our very own Easter tradition.

So put on your aprons, get your ingredients and let´s bake. 

Ingredients batter:
 – 4 eggs 
– 200 grams of grounded almonds
– 250 ml rape oil
– 1 tablespoon cinnamon 
– 2 tablespoons baking powder
– 250 grams flour
– 250 grams sugar
– 375 grams carrots grated


– mix eggs, sugar, oil and cinnamon together
– mix in the carrots and the almonds
– mix in the flour and the baking powder
– put the batter into a buttered round pan
– bake for 40 minutes at 180 degrees

Ingredients frosting:
– 250 grams white chocolate melted and cooled
– 2 tablespoons lemon juice 
– 320 grams butter soft
– confectioners sugar sifted 
– 450 grams cream cheese in room temperature


– mix everthing together and let it cool again for about ten minutes until you put it onto your COLD cake
– spread evenly


Decor:
– 12 marzipan carotts

You could also decorate with colorful candy eggs but I choose these little marzipan carrots to top the cake with.

and welcome to another Food Friday I hope you are hungry cause today´s recipe is awesome. Delicious, healthy, super quick and so easy.


I am a sucker for tuna so I was so happy when I found this tartelette recipe on Pinterest.


This is a one of a kind quick and easy meal with an addictive factor cause it is so so good.


Ingredients for the dough:
– 6 cans of tuna
– 2 purple onions chopped

– 2 eggs
– 3 cups of bread crumbs
– jalapenos
– lemon juice
 – chopped parsley

Top with:

– capers
– horseraddish


How to:
– mix all the ingredients together. Season with salt and pepper if you think it is necessary
– make small patties
– put olive oil into your skillet and heat up
– cook them on medium heat. be sure to turn them often since you don´t want to get them burned on one side
– serve with capers and horseraddish

Side dish:
I made some wild rice to the tuna tartelettes since I really adore rice and think this blends very well with the taste of the tuna. 


You can add as many onions or jalapenos as you want to make it extra spicy.

Food Friday – healthy chicken noodle soup….

since the weather is so steady bad – lots of snow and ice and low temperatures – and lots of people around us are ill or/and caught the flu I am sharing one of my grandma´s recipes today. I always loved heading to my grandma´s house in the Winter time or flu season and enjoy a delicious bowl of hot soup. 
A healthy chicken noodle soup. This kind of soup is supposed to keep you healthy or to help you get on your feet again.

And summarized it also tastes so good and is not difficult in the making. It cooks on its own.

Here is what you need:

– chicken thighs
– a carrot
– one leek
– one piece of celery
– few leaves of lovage
– salt / pepper / vegetable broth
– soup noodles 
–  chives cut – can also be frozen since they are only to garnish
 – pair two litres of water (or if you want more broth you take more, the importance is that the chicken thighs have to be covered) with the needed amout of broth
– cut the vegetables in small pieces and put them in the pot with the water
– now wash the chicken thighs and put them in the pot as well (make sure they are covered with broth)
– let it cook for about 45 to 50 minutes on medium heat – needs to cook all the time
– heat up water in a different pot for the soup noodles about 15 minutes before the chicken is done and cook the noodles till you like them
– take out the chicken thighs and separate the meat from the bones (be careful so you don´t take of a small bone as well with the meat)
– combine everything in a soup bowl
– garnish with chives and enjoy
– you can spice it up with some more salt and pepper if you want

I totally love it and probably gonna make this over and over again.
