we already celebrated our last BBQ for this Summer. All good things have come to an end at some point, am I right? So there are going to be lots of fall inspired, mainly pumpkin inspired recipes on the blog very soon.

But for today I have another delicious and not so common salad idea for you. A gnocchi salad. For everyone who doesn´t know what Gnocchi are. They are small and round little dumplings make from mainly potatoes and some other ingredients. Gnocchi are and Italian specialty and very popular in Germany, probably like Spaghetti.

But for this type of salad I need them cooled down or at least not as hot as fresh.
The other ingredients are:
 – 1/3 cup pine nuts
– several leaves of basil
– parmesan cheese (grated)
– white balsamic 
– one package of Gnocchi (meassures 250 gr.)
– boil the Gnocchi in hot water (turn down the heat after it cooked up once) until they swim on the surface, only takes them about ten minutes as they are sold precooked

– let them cool down or the parmesan cheese is melting right away and you have one big chunk and no salad

– while the Gnocchi are cooling, brown the pine nuts in a pan (don´t add an oil or fat you won´t need it), be sure to wait at the pan as they get brown in the blink of an eye and then burn

– mix the Gnocchi, parmesan cheese, white balsamic (be careful by adding, I don´t have a meassurement cause I just add as much that the ingredients don´t stick together) and pine nuts in a big bowl

– add the basil leaves (I don´t chop them but you can do whatever you like)

– I served it with the BBQ this time but it is also delicious with a sandwich or a bagel or even fish

 it is another Friday which means another recipe. The past six weeks have been the hottest we have ever had and I really like the hot summer weather but the temperatures have been too high.


So I was searching for ways to cool us down and help us to survive the heat. How about a nice and refreshingly cool drink to start with. We had been to a Mexican restaurant months ago and they had a drink on their specials which was pretty delicious but I don´t really know what was in there so I tried to copy it as good as possible. In the end it didn´t look like the restaurant drink at all, but I was fine with my “own” version I have created and all of our BBQ guests liked it too.

So here is my super easy and quick summer bowl recipe. 

Ingredients:
– 1 bottle of rosé wine (take whichever you like)
– 1 bottle of Schweppes Tonic Water
– blueberries
– raspberries
– lemon balm or mint

– put in the fruits
– fill in the drinks (I used both bottles and added one bottle of cold water too)
– mix everything together and store in fridge
– add some crashed ice before serving it
– lemon balm is optional but I really loved the look and the taste of it
