it´s been almost 5 weeeks since we are back from Lake Garda and I am finally coming around to write my last travel post in terms of this vacation. Read my Food Guide here and my Verona Travel Diary here. 

We checked-in in the afternoon and only hang out by the pool until it was time for dinner. After we dressed up we went down to the Peschiera city centre and had dinner at one of our favorite restaurants.

But you don´t have to be by the pool every day, there are plenty of acitivites you can do around the lake. I have rounded-up some activities we already did or planning for the next time.

What to do:

 – visit the surrounding cities (we already visited Garda, Lazise, Sirmione, Bardolino, Peschiera del Garda, Verona, Milan,

 – go to the market (there are local markets every day, our favorite one is on Thursday in Barodlino but we also visited the market in Garda on Friday and Peschiera del Garda on Monday)

 – play mini golf (we love to go play after dinner, also it isn´t as hot anymore)

 – shop ´till you drop (Affi has a huge shopping centre with different Italian stores, also shopping in Verona is great and every little city of course has its own shops)

 – bath in the Lake (there are places which don´t belong to the hotels everywhere)

 – go wine tasting (I always wanted to do 

 – visit the Gardaland theme park (I have been years ago and it has evolved so much, there are a ton of new rides so whether you are a rollercoaster junkie or you are visiting with your toddler there is lots of fun for everyone)

 – go on a ferry ride to another city

 – go to a dinner show (there are two dinner shows available – a Rock´n Roll dinner show and a Medieval Times dinner show)

 – rent a boat (only possible if you have a boat license, the lake is huge and the cities can also all be visited by boat so if you are fed up of riding your car give it a try)

 – go parasailing (I have done this years ago and for 50 Euro I would say it is totally affordable and you have the greatest view of the lake you will ever get, awesome experience)

 

This are some of my top recommendations if you want to do a little more than lying by the pool.

I am by now out and about on my way to go brunching with a dear old friend but of course I do have a delicious treat for you – in fact I have two.

Who else doesn´t love side dishes ? In fact I love them more than my main dish at 90 % of the time so I love to try out new ones and if they are delicious there is nothing better than sharing with you guys. But for today I have not only one, but two great sides.

Corn Salad

Ingredients:

 – corn

 – purple onion

 – feta or mozzarella cheese

 – bacon

 – olive oil

 – vinegar

 – parsley

White Bean Mash

Ingredients:

 – a can of white beans

 – cottage cheese

 – red pesto

 – parsley and chick peas to garnish

 – salt and pepper for seasoning

 

Both are quick and easy made. Each is under 10 minutes , I promise. Just throw eyerything together and enjoy. If you are planning on making one or both let me know or tag me.

I haven´t posted a Food Friday post in a long time and I really don´t know exactly why. The last couple of weeks were really hard for me in terms of finding delicious meals to cook cause it was just to hot for me and I am not hungry at all with these temperatures so I made my usual meals and tried nothing new. But then my Crockpot arrived from the amazon Prime Days and the temps also dropped so I got back my sense and happiness for cooking and saved so many new recipes I wanted to try. Absolutely going to write a full review on my Crockpot but that is another post.

Anyways since this pie is no Crockpot recipe it is a total different theme here today. I am a lover of all things pie. In my opinion these are the most versatile cakes. Just fill your crispy pie crust with whatever you crave that day. For me it was a simple but also as delicious buttermilk pie. We love a gooey cake at the Reisinger house so this was so perfect and also tasted super fresh for summer time.

I am checking in with one quick and easy but oh so delicious recipe today. I love it this much I already made it twice in the same week. We are talking about spinach mozarella spaghetti. 

The recipe itself is super easy and you can adjust it as you like it cause I always put some spicy seasonning into the sauce to make the most out of this simple dish.

So these are the ingredients you need and I bet most of them are ones which already sit in your pantry and wait to be used.

Ingredients:

 – spelled spaghetti (you can also use normal ones)

 – frozen spinach (about 1 1/2 cup but in fact you can use as much as you like)

 – 2 cans of diced tomatoes

 – 1 cup of heavy cream

 – seasonings (salt, pepper, tomato seasoning and some chili flakes)

 – mozzarella (dice it yourself or use the mini mozzarella balls)

 – basil leaves to garnish you dish

 

Instructions:

 – cook the noodles al dente

 – make your sauce by putting the diced tomatoes, the heavy cream, the seasonings and the spinach into a pan and heat it up, stir ocassionally and taste to make sure you have seasoned right, I   would start with a half taplespoon of each

 – serve on a nice spaghetti plate and garnish with the diced mozzarella pieces and some fresh green basil leaves

– enjoy

This recipe make a super easy weekday dish. It is done in under 20 minutes and tastes great. You can also double the ingredients to have enough leftovers for the next day.
