Cheesecake on a Stick – Colorful Spring and Easter Dessert…

Some recipes are made for eternity and will be made uncountable times in your life and a cheesecake is one of it in my opinion. It is easy, classic, usually a crowd pleaser and can be super versatile by adding what you like as topping or filling as well.

So for our Easter brunch I make a carrot cake every year and decided I want to add a fancy version of my chesesecake as well.

Lots of color is one thing I especially like when Spring rolls around, the other thing is and over the top topping on my cake. I can not eat much of it cause of my Gestational Diabetes but I already made a little list on what I am going to eat first after this baby will be born.

The recipe itself is pretty easy. It is a cheesebake without the crust so you only have to make the batter and put it into the oven for about 50 minutes at 170° degrees.

So here are the ingredients you will need:

– 250 gr of soft butter

– 250 gr of white sugar

– 4 egg yolks

– 4 egg whites

– zest of 1 lemon

– 125 gr semolina

– 2 teaspoons of baking soda

– 1 package of vanilla pudding

– 750 gr of lowfat quark

– pinch of salt

– mix butter, sugar and salt together until creamy

– add the eggy yolks and mix until smooth

– now add the lemon zest, semolina, baking soda, vanilla pudding and quark until your batter is super smooth

– beat the egg whites in a separate bowl until they are fluffy and firm and then carefully fold it into your quark batter 

– put your batter into your cake tin and then bake 

After letting it sit to cool in the cake tin (which is absolutely necessary cause the dough won´t get hard unitl it has cooled of) I cut it into about 12 to 15 pieces, depends on the thickness of the cake and put them on a sheet of baking paper. Then I cut the straws and put them into the middle of the cheesecake. I love to match the decor with the straws but that is just a personal preference of mine.

For the deocr of my cheesecake on a stick I got different colored candy melts from Wilton. They are the easiest to melt and have super fun colors. I also added some crispy chocolate eggs, sprinkles and chocolate chips to the mix.

As for decorating the cheesecake I am drizzling the chocolate all over the piece of cake. I tried to dip it into but it gets to heavy and is to much to eat if it is covererd fully in chocolate but that is your decicison. Just make sure the chocolate is super liquid so you get a nice finish when it hardens on your piece of cake. After that I immediately put my toppings on the hot chocolate so it sticks to it when it gets cold.

These are three examples I made on the weekend but you can really use any chocolate color or topping you would like. Fresh fruit may also look really cute but it won´t last as long.

it was a pretty relaxed weekend over here with lots of naps and food other than that I caught on blog stuff and we baked gingerbread cookies together with Emilia.

It was her first time doing something like that and since she loves to help in the kitchen she was super happy about it and of course ate some of the dough too but I mean that´s what baking is all about am I right?!

The gingerbread dough was pre-made and cooled so it was pretty easy to handle. In fact I got it from the food section of Ikea. Yes you heard that right. We went to Ikea just for cookie dough.

All of my decor like the gingerbread baloon is from Pink Dots Party Store. You can shop after seasons and / or colors so it is a pretty easy experience. I get so many of my party stuff from there no matter the ocassion.

The best Cinnamon Rolls Recipe that´s out there…

I have a very special treat for you today. In my opinion there aren´t much more comforting foods out there than a warm cinnamon roll with a fresh and zesty cream cheese frosting and since you all are my people I believe you think the same way.

Following Rach Parcell for years I always wondered about her perfect cinnamon rolls and now I know where the recipe is from. The site is called The Food Nanny and let me tell you the cinnamon rolls are too die for. I made them several times and they even get better and easiert every time. 

They are goey on the inside with lots of cinnamon and sugar and cross but soft on the outside. The cream cheese frosting is optional but we like to eat it like that in this house so here it isn´t an option. Super easy three ingredients cream cheese frosting. I use one package of creame cheese (300 gramms), half cup of confectioners sugar and a big squirt of lemon juice. I mix everything together and add it onto the still warm rolls. If you want it to melt down even more you could also add butter to the frosting. 

That´s it for today, but I could honestly rave on about this delicous recipe for hours not that I need to. Bake it and see for yourself.

I am so happy the whole weekend lies in front of us and it is going to be a good one. We have planned some stuff and it depends on were you are Independance Day is taking place. 

Today is your lucky day if you are looking for a new recipe to try as I am sharing my favorite sweets and treats with you. I love baking, it is one of my most loved hobbies and also surprisingly calming. Throghout the years I have tried a ton of recipes I have made over and over again so make sure to read until the end.

#1 Pumpkin Spice Cake with Cinnamon Bourbon Buttercream Frosting

Definitely one of the best pumpkin pies I have ever made. The frosting tastes so delicous with the pie crust. A absolute fall must-have to bake.

#2 Flourless Chocolate Chip Cookies

Made these countless times during quarantine. Super soft consistency and the peanut butter taste comes right out. You are going to be addicted.

#3 Red Velvet Cupcakes

Not only perfect for Valentine´s Day but for year round. I have always loved a piece of red velvet cake. It is something so special. Flavorful and velvety soft plus the fresh cream cheese frosting. Perfection on its own. One of my favorites to date. 

#4 Lemon Bars

Awesome sweet treat to try if you love a zesty note in your cakes. I definitely would recommend trying this. I personally loved the taste although the look itself went horrible wrong as I have used an oven form that was way to small for the amount of dough and batter I have. I will bake them again very soon and hope they will look pretty enough to post and to serve. Southern Living has some of greatest recipes I have found on the internet, not only for baking but for cooking too.

#5  Peach Blueberry Cobler

This was a first for me but to be honest it was super easy to prepare and even more to bake. A classic southern desert and perfect for Summer with all the fruits. In fact you could use every fruit you like.

#6 Chocolate Buttermilk Cake

Have baked this one for so many ocassions whether for a birthday, Christmas or just for the weekend. It is definitely loaded and not for the faint of heart as the calories are skyrocketing per piece with all the chocolate, butter, heavy cream and confectioners sugar but definitely worth a try. Make sure to at least double the dough or it won´t be enough for two stories.

#7 Pina Colada Cake

My go-to Summer cake. The Pina Colada Cake tastes fresh but a little zingy with the pineapple and superlight cause of the airy sponge cake. Everyone loved it so far cause it looks super delicous and artsy but is also super easy. Don´t be intimidated by the many steps, it is easier than you think and totally worth it.

These are my top 7 recipes I wanted to share with you as I love to have seasonal go-to´s on hand for different ocassion. It is nice to have deserts or cakes on hand you know you can pull of easily and taste great when you are in a quick need of them.
