No Bake Spring Dessert – Physalis (golden berries), Cream Cheese and Biscuits..

are you in for a quick no bake Friday treat ?? I totally think so. I created this dessert last week as I stayed in all day and had to do something creative so why not make something creative and tasty, right?!

These little no bake desserts are delicious and easy to make and only take up half an hour. Also isn´t the vibrant orange color perfect for a Spring/Summer dessert to lift your mood on the gloomy days. So let´s get a pen and some paper and write down what we need.

The Ingredients

for the crust:

– 1 pack of full grain biscuits

– 1 cup of melted butter

Shred all the biscuits into little pieces (don´t make them to tiny or you only have flour left but we want the crunch of the little pieces)

Melt the butter and put into the bowl with your shredded biscuits, stir well to combine

The consistency should be as sticky as possible without getting to wet (but you can easily fix that by adding more biscuits or more butter)

Put the mass into the little jars (two tablespoon per each and press it to the bottom/the jar should be covered by half know)

If you melted your butter on the stove or in the microwave make sure the biscuit mixture cools down before adding your topping, otherwise it will melt

for the topping:

– 1 cup of cream cheese

– 1 cup of marcarpone

– 1/2 pack of lemon zest

– 1 tablespoon of vanilla sugar

– 3 tablespoon of apricot marmelade

– 1 teaspoon of Wilton food coloring color yellow (make it as intense as you like)

– physalis to garnish 12 without leaves and 12 with leaves (or any other berry you like or not)

Mix everything together as you like (the consistency of the cream is perfect) and fill it into a piping bag to add it onto the crust. In fact you can put into as much as you like.

Garnish it with two physalis (or any other fruit you like).

You can enjoy/serve it right away or cool it for max. two days in the fridge.

I really enjoyed it and the rest of my family did as well. This could also be the perfect Christmas dessert. Just add some gingerbread flavor to the biscuits and some vanilla or chocolate into the cream.
