Soup Sunday Recap – Tomatoe Soup, Potatoe Soup and Tortellini Spinach Soup…

….

Fall time equals soup time. The rainy days and cold evenings definitely long for comfort food. I have always loved soups and especially acknowledged and increas during Fall time so for this year I started a new series – Soup Sunday. I am sharing all through September and October and maybe November a new soup in a reel every Sunday. So if you are interested definitely head back to my Insta on Sundays. I have already posted three soups and wanted to recap them really short on here. 

Soup Sunday 1 – 3

Tomatoe Soup 

– 4 apples

– 4 onions

– some olive oil

– about a litre of tomatoe sauce

– 2 teaspoons of vegetable broth

– water 

– 300 grams of cream cheese

– salt and pepper

– toast, cheese and a lot of olive oil

– saute apples and onions in olive oil

– add vegetable broth and cook for about 20 minutes

– add tomatoe sauce and seasoning and cook for another 20 minutes 

– add cream cheese and puree

– enjoy with or without the grilled cheese sandwich

 

Potatoe Soup

– potatoes (about 2 kg)

– one leek

– diced bacon as much as you like

– sausages

– water

– chicken broth two tablespoons

– some oil or fat

– saute the bacon in the pot until crisp

– add the potatoes and the leek and cover with water

– add the chicken broth and stir

– let it cook for about 30 minutes or until potatoes are soft

– mash potatoes

– cut sausages and add topping if you like

– enjoy

 

Tortellini Spinach Soup

– tortellini (about 800 gr)

– tomato sauce (about 500 ml)

– chicken broth 500 ml

– cream cheese 

– frozen spinach 

– garlic / salt / pepper / oregano (a teaspoon of each)

– put everything (except the spinach) into the CrockPot and set on high for 3 and 1/2 hour 

– add the spinach during the last hour 

– enjoy

Black and White Cake Pops…

I am not much of a candy gal but cupcakes, cookies and of course doughnuts have my heart. If I make any of these I am a 100 % sure I am going to eat more of them than I anticipated but I just can´t stop until they are gone. So I am not making these kinds of sweets often but last week Emilia wanted to have a cake pop and since you can´t get them anywhere I decided to make some at home.

They have been very easy to make although they look very complicated but there are only a few simple steps to follow and you have yourself some cake pops. You can make them as colorful as you like but I went with classic black and white ones today. They would look very pretty at a roaring 20´s party for example.

Now let´s talk about the few steps that will lead you to your delicous cake pop. First of all make the cake. I have used this recipe twice already and it works out great every time. Then make your frosting. You are crumbling up the baked cake to add the frosting and make little balls, stick the cake pop sticks into them. After that I put them in the fridge for about two hours. In the meantime I am melting the chocolate I need and get the decorations ready cause the chocolate hardens fast and you will get your sprinkles and mini marshmallows on there quickly.

Who else is always hot in the Summer and constantly looking for a refreshment. This can be a little inflatable pool in your garden with ice cold water or the air condition in your car but also a delicious refreshing drink.

How To

I personally enjoy a carbonated drink over any other so we have been using the Soda Stream for a few years now to always have fresh and sparkly water at home.

In both of my pregnancies I had to stay as sugar free as possible because of the gestational diabetes so I have looked for other ways to get some flavor into my drinks cause soft drinks were not allowed. I have found out that Soda Stream offers lots of sugar free syrups so I got a bunch and tried them. To be honest I was very surprised cause what I got tasted pretty good. Started with Berry and Cherry I also got Orange (tastes like Fanta) and Lemon (tastes like Sprite). They also offer a Coke syrup but I am team Diet Coke for life so there is no way I am going to try this.

The handling of the Soda Stream is very easy. You take your bottle and fill it with tap water and then put it into the Soda Stream. There is a button on top and you can press it as often as you like. It gets more and more carbonated with each push. We do around 4 to 6 but we like it sparkly. 

I am not drinking much alcohol in the Summer. It is just too hot and I don´t need to add anything that makes me sweat. Also with being pregnant and breastfeeding there was no room for alcohol as well so I tried to pimp my sparkly lemonade with little cocktail umbrellas, slices of citrus fruits, colorful straws and fancy glasses. Gotta tell you it is a total mood booster to hold a fancy drink in my hand. 

It also helps to prevent plastic garbage cause you won´t by nearly as much beverages as you have before. Definitely  a plus to help keeping the environment cleaner.

Delicious Bunny Bait as an Easter Treat…

With Easter right around the corner I just can´t wait for all the delicious treats that come along our way and also for our big Easter brunch. I still have some other recipes I wanted to share with you but I couldn´t wait for the Bunny Bait cause it is so easy, funny and yummy plus it is amazing to gift to your family and friends. 

Colorwise there are endless possibilities but to make it Easter appropriate I went with green, yellow and orange. It looks so beautiful and springy I just love it. 

For our Bunny Bait I have used:

– mini pretzels

– macadamia nuts

– oat pillows 

– sprinkle mix Easter themed 

– crunch balls 

– M&M´s 

– white choclate

Quantities aren´t really that important here. I have used one cup of all the main ingredients and the sprinkles and M&M´s just to cover the crunch.

You can add and take away as many as you want. I have also made a Reel that you can watch on my Instagram account if you are interested. 

First I mix all the dry ingredients, then I put in the chocolate and stir, stir, stir. After that I spread the whole batter on a sheet pan and evenly distribute the sprinkles, crunch balls, M&M´s and everything else you want to use to decorate. Now you have to wait until the chocolate hardends. It can take up some hours. 

Then I break it into little pieces to put into Weck jars to keep it fresh or if you want to gift it you can put it into little paper or plastic bags. Also if you want to gift it for Easter you can definitely put on some bunny shaped tags.
